Tuesday, November 13 Stir-Fried Tofu and Veggies over Rice Pilaf Rating: 4

I was sick with a cold so I was glad that this was Seth’s night to cook anyway. Back when we first started dating, he did all the cooking. I took over most of it when we went vegan, after both having been long-time vegetarians. One of the dishes he always made when I came to visit (I lived in Charlotte for the first two years we dated) was this one. He would get a package of baked teriyaki tofu and cook it with fresh veggies and serve it over a wild rice pilaf. Sadly, we can no longer find the pilaf he used, but the garlic variety from Near East is good too. The veggies he used here were broccoli, bell pepper, carrots, onions and garlic. It’s a really simple dish, but so tasty and, well, maybe a little sentimental for me. I really like the pilaf instead of plain rice. Extra yummy dinner from my awesome guy.
