So, after eating a lot of comfort food lately, I wanted to try something a little healthier. I figured the Forks Over Knives cookbook would be a good place to find a hearty and healthy mael. This dish actually comes out more like a soup than a stew, but it’s really tasty. I liked how flavorful it is without adding fat or unhealthy ingredients. You use a fair amount of smoked paprika so it’s nice and smoky tasting. It’s also a pretty easy weeknight meal, full of veggies and other stuff that’s good for you. It makes a lot, so we had leftovers for lunches throughout the week. It’ll be a soup that goes into our rotation of soups this winter.
