We went through a bit of a pizza embargo when Seth decided he didn’t like vegan cheese about two years ago. Thankfully, he’s gotten over it in the last several months and we can now have pizza again. Normally, we go to Mellow Mushroom, but we’ve gotten kind of burnt out on that so I decided to make one at home. I used to always make my own crust, but decided to cheat this time a little and picked up a pre-made one at Whole Foods (Trader Joe’s has a good one too). We like a lot of veggies on our pies – this time we used spinach, tomatoes, onions, garlic and olives. Oh, and yes – we used some Tofurky pepperoni, which was yummo. Daiya is pretty much the only cheese option for us, so of course, we used plenty of that. We had a nice side salad, too.
