I like this recipe a lot for several reasons: it’s delicious, it’s healthy, it’s easy and did I mention it’s delicious? Appetite for Reduction gets a lot of use around here because pretty much all of the recipes in it meet these three criteria. This is one of those meals that seems kind of fancy-pants, but is really pretty simple. The sauce takes just a few minutes to make, and it tastes like it should be loaded in fat and calories, but it’s not. I think I overdid it a little bit on the lemon juice this time, so I’ll cut it back some the next time I make it. We like to serve it over sautéed spinach and mashed potatoes. The recipe says 4 servings, but we like it so much, we uh, usually only get three. This time I got to keep the leftovers for lunch. Yay! I win!
