Ugh. Just Ugh. Normally, this is at least a 4.25 or 4.5 dinner. I planned this meal specifically because we got a LOT of potatoes from the CSA, and several of them were the perfect size for this recipe from Viva Vegan. Sadly, I undercooked them a bit, so the larger potatoes weren’t quite done. Adding to my potato woes was the fact that this was not my best batch of seitan. It wasn’t bad, but I was in a hurry when I made it a couple of weeks ago and well, it maybe needed to steam for a little while longer than it did. When I made it, I really thought that I just hadn’t let it chill for long enough, so I though it would have firmed up correctly by the time I used it up. No so much. So, between the potatoes and the seitan, this could have, and should have been a lot better. Oh well. The peppers and onions were good, and the rice (also from Viva Vegan) was perfect as always. Oh, and since I was doing this in the grill pan, I didn’t use skewers, but it’s amazing cooked over charcoal. Seth made some yummy salsa and guacamole, which helped me feel better over my lackluster performance with this one.
