Caribbean Rice & Peas

Another new recipe. Is it obvious I’ve been spending more time with my cookbooks lately? I love Vegan Eats World and everything we’ve made from it has been delicious. I’ve really liked the rice and bean recipes and this one was no exception. By the way, in case you don’t know, in the Caribbean they call beans peas (a factoid I learned from a former coworker who was from Jamaica), so this recipe contains no green peas at all. But I do love when you go to an Indian restaurant and the little green guys are in the rice. So good. Anyway, I ended up making a half batch because when I soaked and cooked my beans/peas, I neglected to double check the recipe and only made half the amount I need. Sigh. These things happen to me a LOT. Still, it worked out fine, because despite the recipe saying it serves 6, even a half batch made at least 4 servings. Coconut milk and allspice give it the Caribbean flavors. While it’s really good, we both felt like it needed a little more oomph, seasoning-wise. I think I’ll make it again, but will boost those a little bit. I used just one habanero in it and the recipe says 1 or 2, and I think the extra heat would have been good in there. We served some grilled asparagus alongside it.
